This presentation will cover the legal basis and history behind the transfer of food safety regulations of fish of the order Siluriformes from the U.S. Food and Drug Administration (FDA) to the U.S. Department of Agriculture’s Food Safety and Inspection Service (FSIS). It will introduce FSIS’s structure, food safety mission, and the implementation schedule for the new Siluriformes fish inspection program. It will also lay out the program’s major components and how they will be monitored and enforced
